Pure Cider Jelly

Cider jelly is a tart reduction of apple cider of about 9 to 1. The right apples at the right stage of maturity have enough sugar, acid and pectin to jell without adding anything- neither sugar nor pectin- to their cider. So cider jelly contains nothing but concentrated apple cider. It’s a strong, tart jelly- great on toast and bagels, served with a cheese board, or accompanying meats and stews.
